Beef Souvlaki with

Red Pepper-Feta Sauce

Total preparation and cooking time: 30 minutes

cup plain yogurt

1.  Stir together yogurt, bell pepper, feta cheese, minced cilantro, minced mint and 1/4 teaspoon of the pepper in large bowl. Refrigerate while preparing beef.

 

2.  Heat grill to medium-high heat or heat broiler. Place beef in large zip-top bag. Add remaining 1/2 teaspoon pepper, the Greek seasoning and salt; shake to thoroughly coat beef pieces.

 

3.  Divide beef cubes and onion pieces evenly among skewers. Spray meat and grill grates with cooking spray. Grill skewers over direct heat or broil about 4 inches from heat 6 minutes for medium-rare.

 

4.  Remove skewers to serving platter. Drizzle with a little of the sauce; serve remaining sauce in small bowl alongside skewers. Garnish platter with cilantro and mint sprigs.

*If your brand of Greek seasoning contains salt, reduce or eliminate Kosher salt.
