¼ cup olive oil
1½ cups yellow onion, finely chopped
2 tsp. granulated garlic
1 Tbsp. ground cumin
1 Tbsp. leaf oregano
¼ cup Ancho powder
5# shredded beef, fully cooked
1 tsp. salt
½ tsp. black pepper
3 cups Corona beer (2 12-oz bottles)
1 Tbsp. red wine vinegar
lime juice to taste (1-2 Tbsp)
Procedure:
1. Heat the oil in a medium-sized braising pan. Add onions and cook until
transparent.
2. Stir in spices and seasonings over high heat.
3. Add the shredded beef, beer and vinegar and bring the liquid to a boil.
4. Reduce heat and let most of the liquid evaporate, stirring often.
5. Add lime juice, taste for seasoning, and serve on corn tortillas.
